function toOffer(offer): Offer;

The contract's Offer as the core domain shape.
counterparty is dropped: the core Offer has no such field yet, and
every chain's serialization hashes an absent one as the zero address. An
offer that does restrict its counterparty therefore cannot have its id
re-derived from this shape — read the id off-chain instead of recomputing it.
